Fillet of Beef with Sharon Fruit and Chocolate Sauce

FILLET OF BEEF WITH A SHARON FRUIT AND DARK CHOCOLATE SAUCE
served on a bed of sweet potato and broccoli mash

This is a fantastic twist on mashed potato, and the entire dish celebrates the fresh flavours of the Summer season.  The bright, colourful vegetables and fruit used in this dish indicate the presence of vitamins and minerals, including beta-carotene, folate, vitamin C and magnesium.  Lean Irish beef is an excellent source of protein.

Ingredients

4 x 220g fillet steaks
3 Sharon fruit
60g dark chocolate (70% cocoa)
100g broccoli
4 medium sweet potatoes
3 small onions
Freshly ground black pepper, to taste
10ml of olive oil

Method:

Chop the onions and sauté in the olive oil until soft. Peel and chop the Sharon fruit and add to the onions.  Cook over a low heat until very soft.  Break up the chocolate and add to the onions and Sharon fruit.  Allow to melt, then blitz the mixture and set aside.

Boil or steam the sweet potatoes until cooked (about 15 minutes).  Meanwhile, steam the broccoli until just cooked (about 4 minutes). Mash the potato and broccoli together, and season with freshly ground black pepper to taste.

Seal the fillet steaks in a hot pan with a drizzle of olive oil, then cook in the oven to your preference.

Serve the steaks with the mash and sauce.
